On the high plateau of the Hunsrueck rape and various grains such as spelt, which Hildegard von Bingen highly appreciated,  thrive and prosper. On the outskirts of the Soonwald villages one can still find fields with various wild growing fruit trees, traditionally called "Bitz". But there are also new growing fields. In Argenthal and Gebroth extensive wild juice cultures with mountain ash and elder are growing.

Fallow deer and highland cattle grass on juicy forest meadows. Very different is the forage of the dry grass, rich in herbs in the river valleys. Here the meat of the Glan cattle, an old breed of cattle, gets its special flavour.
